What do you do with leftover eggs once the Easter Bunny leaves? They’re fun to decorate, but I hate to let them go to waste.  Some years we have so many eggs! We usually try to include them in our meals for a couple days.

How to boil eggs:

If you’re reading this before Easter, and haven’t boiled your eggs yet, here’s a quick and easy recipe.

Put raw eggs in a pot. Make sure they’re completely covered with cold water. Add a pinch of salt. Bring eggs to a boil for about 1 minute. Cover with lid. Remove from heat and let sit in the pot for 11-13 minutes. Put the eggs in a bowl and let sit in cold water until cool.

Boiled eggs (unpeeled) should be good for up to 1 week in the refrigerator.

How to use your boiled eggs:

Make sure that you keep your eggs at a safe temperature. If they are out in the hot sun for an Easter egg hunt, or have been out of the fridge for too long, I would not recommend eating them. It’s not worth getting sick over. You probably won’t want to eat an egg that’s left out of the fridge for more than 2 hours.

  1. Eat the boiled eggs (obviously) as a snack or with breakfast.
  2. Make egg salad sandwiches
  3. Make deviled eggs (replace mayonnaise with Avocado for a healthier version).
  4. Put them in potato salad.
  5. Add them to pasta salads.
  6. Cut them up and add them to a green Cobb salad.
  7. Use in breakfast burrito.
  8. Slice them up and make a breakfast sandwich with bagels, croissants, or English muffins.
  9. Chop up the eggs and add to a ham and cheese quesadilla.
  10. Pickle the eggs.
  11. If your eggs have gone bad, have fun with them: have Easter egg races and roll them down a hill or have an egg fight.
